Garlic Butter and Orange Chicken

I don’t have a particularly cute or clever story to go along with this recipe. Monday night are never quite exciting in this house, so I try and spruce them up with a fancy meal since our weekends are always crazy. This weekend was especially crazy with vandalism, a stolen dog, and getting chewed out by pompous animal rescue workers. 20140707-194556-71156572.jpgAnyway, back to the recipe. Simple, cheap, easy, and beautiful. Everything I look for when I’m making a meal. So forgive me for not having creative content for this recipe, but I think it will stand well on it’s own. 20140707-194556-71156114.jpg

Ingredients

1 whole chicken (5-6 lbs)

2 navel oranges (one zested both cut into 1in wedges)

2 red onions cut into wedges

Garlic

1 stick of butter

Few sprigs of thyme

Salt to season

Preheat oven to 450.

Mix butter, zest, garlic and a bit of salt together. Separate skin from chicken breast and rub with half of butter mixture. Stuff cavity with a few oranges, onion wedges, and thyme. Tuck wings under and tie legs together. Place chicken in roasting gan or rimmed backing sheet. Place rest of oranges and onions around the chicken and dot with butter mixture. Bake 50 minutes or until juices run clear. Let set 10 minutes before serving. 20140707-194558-71158049.jpg
